in regards to the footroom there are ways around it.
chev small blocks are narrower so you instantly have more room than other makes
you can fit the motor offset to the left and have as much room as you want,
if you sit the motor back a little and as low as possible the rocker covers sit about the same height as the floor and you build the engine cover as part of the floor (i used fibreglass so i had no limits to the shapes i created) so you can still have plenty of room to work on the motor once the engine cover is off but plenty of leg room once engine cover is on, it was hard to get engine cover out so i made it 2 peice cut in the middle side to side.
you could also move the steering collumn also if you found that easier??
you could do any of these or a combination and have enough room for a left foot.
